One of my favorite magazines, Vegetarian Times, had an awesome recipe for coffee cake that I just had to try. It's a vegan Cinnamon Swirl Blueberry Coffee Cake.
The one thing I hate about this recipe is ALL THE SUGAR! But, hey, sometimes we need to treat ourselves and why not treat ourselves to something homemade and we know all the ingredients in it!
When I went out for the ingredients, I accidentally bought blueberry soy yogurt even though the recipe calls for plain. I said screw it and used it anyway. And it came out just as good maybe even a little better because of the extra blueberry flavors.
In the end, it came out delicious. Even mum and the brother loved it. They were surprised that it was vegan! (must of been all the sugar)
