A couple weeks ago, after the gym, I was craving perfectly runny eggs and I just had to have them. So I went home and whipped up a yummy breakfast sandwich! It was so freaking good I just had to share it with you!
Steamed Bok Choy
2 Slices of 12 Grain Toast
Sauté garlic in olive oil until it's cooked to how you prefer it. Remember garlic is one of the few foods that doesn't lose it's nutritional benefits when cooked. Next, add bok choy and kale for about 5 minutes. Place in a small bowl and set aside. Next fry your eggs in just a little olive oil. I like mine with the whites well done and yolk runny but not too runny. Now assemble your sandwich! I did egg, greens, egg and more green. Lastly, place the sandwich on the hot pan and toast each side a little bit longer. Make it your own and play with different veggies or add a really good cheese. Then put it on a plate and ENJOY! Ugh you'll be so happy you tried this.
