This past week I found an incredible little farm stand only 5 miles from my house. It's inexpensive and the fruits and veggies are ridiculously fresh! The owners of this farm stand are an older couple who have dedicated their lives to home grown, fresh, whole foods.
After finding this place and loading up on all my favorite veggies I put together this quick and easy veggie dish. You can have it as a side, over some quinoa or brown rice, or simply by itself.
2 tablespoons olive oil
1 medium onion, sliced
1 red bell pepper, chopped
1 banana pepper, chopped
1 cup mushrooms
1 clove of garlic, minced
1 head of broccoli
1 large zucchini, cut into bite sized pieces
1 bunch of swiss chard, chopped
1 bunch of kale, stems removed and chopped
Heat olive oil in large pan on medium heat. Add in onion, peppers, mushrooms and garlic and let cook for about 2 minutes.Then add in broccoli and zucchini and let that cook for about 5 minutes or until broccoli turns dark green. On top of all the veggies add your swiss chard and kale and cover for about 5 more minutes or until chard and kale are wilted. Serve alone, over your favorite whole grain or as a side.
