My FAVORITE veggie is Brussels Sprouts!
When I found these beauties on the stalk I could NOT wait to get them home and in my oven! As soon as I made them my family ate them and enjoyed them so much they didn't leave one sprout on the stalk! So I knew I had to go get more!
This is so quick and easy to make and you can just leave them in the oven for 40 minutes and go off and get some house work done, get a home workout in, or just chill after a long day of work while these are roasting away.
1 Brussels Sprouts stalk
3/4 cup pure Maple syrup
1/4 cup Olive oil
Himalayan Pink Salt, to taste
Fresh ground pepper, to taste
Red pepper flakes, optional
Preheat oven to 350 degrees.
I had to cut my stalk in half in order for it to fit in a pot to steam and to fit on my baking sheet. Be careful if you need to do this because the stalk is the very tough and you could easily get cut and hey, we really don't want to ruin this lovely veggie with blood, lol. So once you do that you can either boil a small amount of water in a pot and steam the Brussels sprouts for a few minutes or until they turn a beautiful, bright green. If you really don't wanna do that then while there's still water on the stalk you can wrap it in cling wrap and pop it in the microwave for about 4 minutes, some microwaves might only need 3 minutes, so use your judgement.
Next, grab your baking sheet and line it with aluminum foil. Place stalk on baking sheet. Mix together Maple syrup and olive oil. Pour this mixture over Brussels sprouts then season with salt, pepper, and red pepper flakes. Place in your preheated oven for 40 minutes or until Brussels sprouts are browned and crispy. Let cool for a couple minutes and enjoy.
When Brussels sprouts are fully cooked you should be able to pick them right off the stalk. Make this a meal with brown rice, quinoa, or your favorite whole grain. A great protein could be grilled chicken or baked salmon. Take your pick and be creative with your meals so you don't get bored or stuck in a rut.
