It's about that time that we can have fresh corn from local farms! One of my go to farms is Sunset View Farm. Everything is grown right there and just picked! All the veggies are absolutely delicious. If you haven't had farm fresh veggies, you are missing out on what veggies are suppose to taste like.
Corn has so many benefits. It fights age-related vision loss, promotes a healthy digestive tract, and is great to keep your skin healthy. And it tastes so yummy!
My favorite is husk on, soaked in water, and grilled for about 20 minutes. No salt, no seasonings, no butter. The husk helps to keep all that yummy natural, sweet corn taste and steams it perfectly! Unfortunately this Summer I'm without a grill. I'm so sad without it but I improvised!
Seasoned and Roasted Corn
1/2 Dozen Farm Fresh Corn on the Cob
1 Clove of Garlic, minced
2 Tbsp Butter, cut into little squares
1 Tsp Himalayan Pink Sea Salt
1/2 Tsp Chili Powder
1/2 Tsp Ancho Chili Powder
1/2 Tsp Chipotle Chili Powder
Preheat oven to 400°F. Remove husk and clean corn. In aluminum foil, place one ear of corn, some garlic, pinch of salt, sprinkle some of one chili powder, and a few squares of butter. Tightly wrap foil around corn and seasonings. And continue to do this with each ear of corn until you're finished. Place corn in the oven for 35 minutes or until corn is thoroughly cooked. Let cool for a few minutes and serve as a side! So freaking delicious!
1 Large Eggplant, cut 1/2 inch widthwise
Himalayan Pink Sea Salt
Fresh Ground Pepper
1/2 Large Zucchini or 1 Medium Zucchini, cut 1/2 inch widthwise
1 Large Tomato, cut 1/4 inch slices
Aged Parmigiano-Reggiano, grated
On a baking sheet, lined with foil, place eggplant and season with olive oil, salt and pepper and bake in the same oven as corn at 400°F and bake for 15 minutes. Take eggplant out and flip each one over. Stack sauce, one slice of zucchini, and one slice of tomato on eggplant slices. Bake for another 10 minutes. Then spinkle cheese on stacks and bake 5 more minutes. Let cool for a few minutes and serve with corn! Feel free to add more cheese, because why not it's yummy!
