This is my favorite easy go to meal. Being a hairstylist and finishing school, I'm very busy and cooking can take too long. So I make this Power Bowl and it's delicious with tons of vitamins and minerals that we all need in our life. Honestly you can throw in whatever raw veggies you like in this. Customize it and make it your own :)
1 cup quinoa, rinsed well
lime juice from half a lime
1 small onion, chopped
3 bell peppers in assortment of colors, sliced
1 cup halved grape tomatoes
1 cup kale (or your favorite dark leafy greens)
add in any other of your favorite veggies, more the merrier
Cook quinoa according to packaging.
While quinoa is cook mix together avocados and lime juice in a bowl and prep all your veggies.
Once quinoa is cooked let cool for about 10 minutes.
In a big bowl layer everything starting with quinoa then veggies and avocado mix on top and enjoy!
Change up the flavors every time you make it or for those of you who can eat meat add some grilled chicken to it.
If you're on the go as much as I am then layer everything in Tupperware containers and store in the fridge until you're ready to eat it.
